Capri Breakfast Sandwich

I absolutely LOVE breakfast sandwiches! Even though I am not a morning person, the smell of bacon and eggs gets my mouth drooling! This morning I was kind of craving pizza but I am not a "pizza in the morning" kind of girl. So I decided to take a twist on the basic bacon, egg and cheese morning sandwich and add an Italian flair. I call it my Capri Breakfast Sandwich. I used what I had on hand, but if I were to make this sandwich again, I would DEFINITELY use fresh Mozzarella and probably a fancier bread. Serving Size: 1
Ingredients:
2 slices of bread (go fancy if you can! I only had wheat, but it was still delicious!)
2 mozzarella string cheese sticks (again, go fancy if you can! Next time I would use 2 slices of fresh mozzarella)
3-4 slices of cooked bacon
1/2 cup of fresh baby spinach
2 eggs
2-3 tablespoons of good marinara sauce (I added some fresh basil to my sauce when I heated it)
butter
extra basil if desired
Directions:
1) Preheat oven to 350°F.


2) I've heard about rinsing your bacon under cold water before baking it to reduce the shrinkage. So I decided to try it today. I think it worked well!


3) After rinsing bacon, place on a paper towel and pat dry. You don't want your bacon to go in the oven when it's all wet!


4) Once bacon has been patted dry, place bacon on a foil lined baking sheet and cook in oven for approximately 10-15 minutes or until crispy.
5) While bacon is cooking, fry two eggs in a non-stick pan on the stove until done to your liking. I like mine a little runny, but I ended up folding the two eggs together, almost like when you fold an omelet, so the "runny-ness" would stay together.


6) Butter 2 slices of bread generously.

7) Your bacon should be done by now. Remove from the oven and drain on a plate lined with paper towel.

8) Once eggs are cooked to your liking, remove from stove and set aside. Place one slice of bread, butter side down on a heated pan and then add one of the mozzarella sticks (stripped into strings) across the slice of bread.


9) Top the slice of bread and cheese with your eggs.

10) Add 3-4 slices of bacon to your slice of bread, cheese and eggs.


11) Top the bacon with spinach.


12) Add a few tablespoons of marinara sauce.


13) Top the marinara sauce with the second mozzarella string cheese (stripped into strings).
14) Finally, add the second slice of buttered bread and grill the sandwich as you would a grilled cheese. Flip after about 3-4 minutes of the sandwich being on medium. Cook until bread is golden brown. 






15) Serve and enjoy!

Zesty Lemon Garlic Gnocchi

My main man LOVES his lemon and garlic! So I searched the Internet for a dinner dish that would incorporate the two and I came up with so many delicious results! But how do I choose what recipe to use? I decided to combined a few good recipes and came up with something that made him feel like he was in Lemon Garlic Heaven! Ingredients:
1 package of gnocchi
Juice from one lemon
4 tablespoons butter
1/4 cup shredded parmesan
2 garlic cloves, minced
1 tablespoon lemon zest
2-3 fresh basil leaves, chopped
1 teaspoon red pepper flakes (More or less depending on you preference)
pepper and salt to taste
Directions:


1) Bring a pot of water to boil and add gnocchi.
2) Cook and stir for about 3-5 minutes, depending on packaging instructions or until the gnocchi floats to the top of the pot.


3) While gnocchi is cooking, in a small pot, heat butter, lemon juice, lemon zest, basil, garlic and parmesan cheese. Stir until smooth.


4) Drain gnocchi and pour lemon garlic mixture over the gnocchi, then mix well.



5) Serve with Easy Chicken Breasts and vegetables. ENJOY!

Easy Chicken Breasts

Chicken breasts are always an easy-go-to dinner item and you can be creative with how you use them. This is how I normally cook my chicken breasts and I incorporate them in whatever else I make, be it rice, pasta, potatoes, etc. It always turns out great. The best thing about this way of cooking chicken breasts is that it is super easy and super cheap! All you need is olive oil, Italian seasoning or Monterey seasoning, and boneless chicken breasts. That's it!
Ingredients:
4 boneless chicken breasts
1 tablespoon olive oil
Italian seasoning
Directions:


1) Place chicken breasts in a ziplock bag and pound until about 1/4" thick. 


2)Heat olive oil in a sauce pan over medium heat.
3) Season each chicken breast with the italian seasoning on both sides.
4) Add seasoned chicken breasts to pan and cook for about 4-5 minutes per side.










5) Remove from pan and serve. Enjoy!!!

Brown Sugar Skin Scrub

 My legs feel SO smooth right now thanks to this little beauty recipe! I made a homemade sugar scrub and used it BEFORE shaving. Wow! The results are wonderful! You can even use it again after you shave, just to get that winter dry skin off your legs. This stuff smells great too! The only thing I would suggest is to be careful in the shower. You may want to rinse the tub after use because this contains olive oil, so it may leave your tub a little slick. But the end result is worth it!
Ingredients:
1 cup dark brown sugar
1/4-1/2 cup olive oil
1 tablespoon vanilla extract
1/2 tablespoon ground cinnamon




Directions:



1) Mix ingredients into bowl.



2) Mix together until smooth and paste like.




3) Pour contents into an empty jar with a lid. Label and scoop out when needed. Enjoy!

How Do YOU Cook Your Bacon?

I see posts all over the Internet on the "BEST" way to cook bacon. There are so many different ways! My question is, what IS the best way to cook bacon? Pan fry, oven baked, deep fryer? I recently came across an article that states you should rinse your bacon with cold water before cooking to reduce the shrinkage up to 50%. Interesting! Give me your thoughts, what's your favorite way to cook bacon?

Crock Pot Sweet & Spicy Garlic Chicken

I had to leave my house for a few days because we had a crawl space pipe leak and possible mold issue, so I stayed at my parent's house while my main man stayed at our house with the dogs to work things out. The least I could do was cook him a nice warm meal, especially since he had no water. I came across this recipe from Makin' it Mo'Betta and he loved it. I served it to him with rice and then made it for myself over buttered angel hair pasta. It was a hit. Great crock pot meal, definitely recommend it! Ingredients:
4 Boneless Chicken Breasts
1 cup packed Brown Sugar
2/3 cup Vinegar
1/4 cup Lemon-Lime Soda
3 tablespoons Minced Garlic
2 tablespoons Soy Sauce
1 teaspoon Ground Pepper
2 tablespoons Corn Starch
2 tablespoons Water
1 teaspoon Red Pepper Flakes
1 teaspoon Siracha Hot Sauce or any type of hot sauce of your choice
Directions:
1) Spray slow cooker with non-stick cooking spray.
2) Place chicken (frozen, thawed or fresh) inside slow cooker. 
3) Mix together brown sugar, vinegar, soda, garlic, soy sauce, red pepper flakes and pepper together. Pour over chicken. 
4) Cook on low for 6-8 hours or high for 4 hours. 
5) Take chicken pieces out of slow cooker (mine basically fell apart) and pour remaining sauce into saucepan.
6) Place saucepan over high heat. Mix together corn starch and water, pour into saucepan, and mix well. Add the Siracha Hot Sauce.
7)  Let sauce come to a boil and boil for 2-3 minutes, or until it starts to thicken and turns into a glaze. 
8) Remove from heat and let sit for a minute or two (it will continue to thicken as it cools down).
9) Pour sauce over chicken and serve over rice or noodles and ENJOY!
