Broccoli and Cauliflower Salad

I'm always looking for a good side dish to go with a hearty dinner. I absolutely LOVE broccoli salad, but sometimes feel like the large amount of mayonnaise and the red onion bother my stomach. This recipe has a little different dressing, still uses some mayonnaise, but I decided to substitute the red onion with sweet onion. SCORE! The recipe was based on Food Network's Melissa d'Arabian's recipe, I just added a few more ingredients and tweaked it a bit. Absolutely delicious! I hope you enjoy it too! Ingredients:
2-3 slices bacon, cut into small pieces, cooked
1 1/2 cups broccoli, cut into small florets
1 1/2 cups cauliflower, cut into small florets
1/4 sweet onion, chopped
1 large carrot, shredded (about 1 cup)
2 tablespoons sugar
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
2 tablespoons vegetable oil
1/4 cup mayonnaise
1/2 teaspoon Old Bay seasoning
Salt and pepper to taste
1/2 cup shredded cheddar cheese
Directions:
1) Cook bacon until nice and crispy. Once cooked, set aside on a paper towel lined plate to drain grease.
2) In a small bowl, whisk together the sugar, vinegar and Dijon mustard.  Add the vegetable oil and whisk. Then mix in the mayonnaise and Old Bay seasoning. Whisk well. Finally, season with salt and pepper.
3) Place the broccoli, cauliflower, onion, carrot and bacon into a large bowl. Toss well.
4) Pour the dressing over the vegetable mix and toss. Finally, add the shredded cheddar and mix well.
5) Chill for about 30 minutes before serving. Enjoy!

Cottage Cheese Scrambled Eggs
Who doesn't like scrambled eggs? Who doesn't like cheese? Ok...maybe there are some crazy people out there that don't like either, but hey, we're talking about me right now :) I MUST have cheese with my scrambled eggs. It is a MUST. In fact, several years ago, a good friend of mine, Monica, taught me how to make the BEST cheesy scrambled eggs EVER. But that will be another post! This post is a strange twist on cheesy scrambled eggs...I used cottage cheese. I know, you're probably thinking, that is disgusting, but hey, you only live once...or as the young people say: YOLO. Ingredients:
2 Large Eggs
2 Tablespoons Large Curd Cottage Cheese
Shredded Cheese to your liking
Non-Stick Cooking Spray
Parsley, Salt and Pepper to Taste
Directions:
1) Heat a medium skillet to medium heat and spray with non-stick cooking spray.
2) Crack two eggs and drop them into the skillet. FYI: The best way to crack an egg without getting shells in your mixture is to lightly tap it on a flat surface, then empty the contents into the pan. If you're worried you will still get shells, crack the eggs into a separate bowl, make sure there are not egg shells, then add to the pan.

3) Add 1 Tablespoon of cottage cheese per egg. So this recipe, add 2 Tablespoons.

4) Slowly stir the eggs and cottage cheese on medium heat so that they scramble together.
5) Add parsley, salt and pepper to your liking. Top with a bit of shredded cheese and ENJOY! See how easy that was?!

Grilled Turkey Coleslaw Cheese Sandwich


This may be the WORST photo I have ever taken, but nonetheless, it was a delicious and an easy lunch item. Not much to it, but thought I'd share with y'all!
Ingredients:
1 to 1-1/2 tablespoons Margarine
2 slices bread
Non-stick cooking spray
Directions:
1) Spray cooking pan with non-stick cooking spray. Heat stove top to medium heat.
2) Spread margarine over each side of bread.
3) Place one slice of bread, margarine side down, on cooking pan. Place one slice of white american cheese, then 3 slices of turkey, then top with coleslaw and finally, top with the second slice of white american cheese.  Place second slice of bread on top.
4) Let sandwich cook for about 4-5 minutes, then flip and cook again for about 4-5 minutes.
5) Once bread is golden brown and crispy, remove from pan and let sit for 2-3 minutes. Slice and serve! Enjoy!
