Mediterranean Wrap


I developed this tasty and healthy wrap back when I worked at a Brewery in Kalamazoo, MI. The menu featured several different types of wrap sandwiches, but I always liked mixing the different ingredients to come up with my own personal versions of each wrap. One day, the kitchen manager asked if he could use one of my "wrap" recipes as the daily special, because they had an abundance of chicken, spinach, and hummus they needed to use.
This is super easy and you can alter it if you want a vegetarian option. This recipe is only for one serving, I don't really use measurements on this because it is really all personal preference....use your imagination! I also recommend trying out different dressings and tortillas to change it up!
Ingredients:
1 x Spinach or Sun-dried Tomato Tortilla
1- 2 Tablespoons Roasted Garlic Hummus
Small bunch of Spinach, fresh flat leaves
1/4 of a Carrot, slivered or shredded
1/4 of a Cucumbers, spears or thin slices
2-3 Cherry Tomatoes, chopped
1 x 4oz Grilled Chicken, sliced
Feta Cheese, about 1 Tablespoon
Italian or Greek Dressing, about 1-2 Tablespoons
Instructions:
Warm the tortilla in the microwave, for about 8-10 seconds. Spread the hummus over the tortilla, sprinkle the feta cheese over the hummus and then layer the remaining ingredients. Drizzle the dressing of your choice over the open-faced tortilla, then roll up and enjoy!!
