If
you are looking for a super easy dinner with only 6 ingredients, THIS IS THE
RECIPE FOR YOU! I found this on Pinterest, it comes from the Best Life 4 Moms blog. You can find
her recipe with step by step photos here: http://bestlife4moms.weebly.com/5/post/2012/04/cheesy-broccoli-chicken-foil-packs.html.
But it's really simple and fast! I've included the prices for all the
ingredients, I was able to do make this for under $15 and still have leftovers of
broccoli, cheese, bacon and ranch dressing that I can use in other recipes.
Ingredients:
1
package Stuffing Mix; Chicken Flavor (Save-A-Lot $1.00)
1
1/4 cups Water
4
Boneless Skinless Chicken Breasts (Kroger 3lbs @ $1.88lb)
4
cups Broccoli Florets (Kroger $1.00 - this was a 10 for $10 deal, I bought two
bunches: $2.00)
1
cup Shredded Cheddar Cheese (Kroger $1.77 for 8oz)
4
slices of Cooked bacon; crumbled (Kroger $3.50 for a full pack)
4
tbsp Ranch dressing, divided (Kroger $1.99 for a bottle)
Foil
-Oven
to 400 degrees
Instructions:
-Spray
4 large sheets of foil with cooking spray.
-Mix
the stuffing and water in a bowl.
-Spoon
1/4 of the stuffing mixture onto the center of each sheet of foil.
-Top
stuffing with 1 chicken breast.
-Top
the chicken with about a cup of broccoli
-Sprinkle
1/4 of the cheese and 1 slice of the crumbled bacon over the broccoli.
-Drizzle
with about 1 T. or Ranch dressing.
-Bring
the sides of the foil up to seal into a "packet" but leave room for
heat circulation inside.
-Place
the "packets" on a cookie sheet and bake for about 35-40 minutes.
-Remove
"packets" from oven and let stand for about 5 minutes.
-Cut
slits in foil for steam before opening...they are HOT!
You
can eat straight from the foil, but I always fear that horrible metallic taste
you get if God forbid a piece of foil gets in your mouth. So I just carefully
slid the contents of each "packet" onto plates and enjoyed this mouthwatering
dish. Hope you do too!
