Crock Pot Sweet & Spicy Garlic Chicken

I had to leave my house for a few days because we had a crawl space pipe leak and possible mold issue, so I stayed at my parent's house while my main man stayed at our house with the dogs to work things out. The least I could do was cook him a nice warm meal, especially since he had no water. I came across this recipe from Makin' it Mo'Betta and he loved it. I served it to him with rice and then made it for myself over buttered angel hair pasta. It was a hit. Great crock pot meal, definitely recommend it! Ingredients:
4 Boneless Chicken Breasts
1 cup packed Brown Sugar
2/3 cup Vinegar
1/4 cup Lemon-Lime Soda
3 tablespoons Minced Garlic
2 tablespoons Soy Sauce
1 teaspoon Ground Pepper
2 tablespoons Corn Starch
2 tablespoons Water
1 teaspoon Red Pepper Flakes
1 teaspoon Siracha Hot Sauce or any type of hot sauce of your choice
Directions:
1) Spray slow cooker with non-stick cooking spray.
2) Place chicken (frozen, thawed or fresh) inside slow cooker. 
3) Mix together brown sugar, vinegar, soda, garlic, soy sauce, red pepper flakes and pepper together. Pour over chicken. 
4) Cook on low for 6-8 hours or high for 4 hours. 
5) Take chicken pieces out of slow cooker (mine basically fell apart) and pour remaining sauce into saucepan.
6) Place saucepan over high heat. Mix together corn starch and water, pour into saucepan, and mix well. Add the Siracha Hot Sauce.
7)  Let sauce come to a boil and boil for 2-3 minutes, or until it starts to thicken and turns into a glaze. 
8) Remove from heat and let sit for a minute or two (it will continue to thicken as it cools down).
9) Pour sauce over chicken and serve over rice or noodles and ENJOY!

Cheesy Bacon Bombs

Again, I have made a dish that requires crescent rolls. Oh Lord! I have a problem! But these things are seriously "The Bomb"!!!! The cheesy bacon bomb! Super easy to make and super cheap. I used mozzarella but next time I am thinking about using pepper jack cheese, for an extra KICK! This recipe is adapted from Ohbiteit.  I only added garlic butter to the end to give it some more flavor. This is a MUST recipe...especially on these cold nights when you just want some comfort food. Thumbs up!
Ingredients:
1 package of bacon
1 tube of Crescent rolls
3 Mozzarella string cheese sticks, cut into small cubes
2 tablespoons of Butter
Garlic Powder
Directions:
1) If using a deep fryer, set the temp to 350°F. If not, heat about 2" of oil in a pot at 350°F.


2) Spread out the crescent rolls on a baking sheet and pinch together the seams.



3) Cut the crescent rolls into quarter squares.




4) Place a Mozzarella cube into each crescent roll square and then seal it.













5) Wrap the Mozzarella/crescent cube with one slice of bacon and then use a toothpick to bind it all together.
 




6) Fry the bites in oil at 350°F for about 4-5 minutes, or until the bacon is nice and crispy.




7) Remove the bites from the fryer or pan and let drain on a paper towel.




8) Heat butter and mix with garlic powder. Using a pastry brush, brush the butter mixture over the bacon bombs and let sit for about 5 minutes, then ENJOY!

Bolognese Crescents

So, I have a serious obsession with crescent rolls lately. We really enjoyed last night's Spicy Bolognese Pasta and I guess I enjoyed it so much that today I thought, hmmm...I wonder if I can stuff a crescent roll with this Spicy Bolognese Pasta? And yes...I did. And yes...it was FABULOUS! Go for it!
Ingredients:
4 Mozzarella String Cheese sticks, cut in half
2 tablespoons of butter, melted
Garlic Powder
Directions:
1) Preheat oven to 350°F.
2) Place crescent rolls on a baking sheet that has been sprayed with non-stick cook spray.
3) Place one half of the cheese stick on each crescent roll.
4) Top the cheese with a spoonful of the Spicy Bolognese Pasta.
5) Roll the crescents up and seal the edges.
6) Melt the butter and season it with the garlic powder.
7) Using a pasty brush, brush on butter to the tops of each crescent roll.
8) Bake at 350°F for 10 minutes. Repeat the butter brushing and bake for another 5 minutes. 
9)Let stand for 5 minutes and ENJOY!

Spicy Bolognese Pasta

I am NOT Italian, even though if I could live in an alternative life, I would most definitely be ITALIAN! Now, if I could just learn to cook like a true Italian! I am a work in progress. Tonight I decided to make a Bolognese recipe based on two of my favorite Food Network Chefs, Giada De Laurentiis and Ina Garden version of Bolognese. Out of the 4 of us in this house, I received 4 thumbs up! I have never cooked Fusilli Col Buco, so I was unsure about the texture of the pasta being too "al dente" for my guests....but apparently they liked it! So here is what I have created tonight; it is spicy, flavorful and definitely easy to make. You be the judge on this one and let me know! To print recipe without photos, click: PRINT
Ingredients:
2 tablespoons olive oil
1 lb lean ground beef
1/2 lb ground sausage
4 teaspoons minced garlic (4 cloves)
1 tablespoon dried oregano
1/2 teaspoon crushed red pepper (use less if you do not like too much spice)
1 1/4 cups dry red wine, divided
1 (28 oz) can crushed tomatoes
2 tablespoons tomato paste
Kosher salt and ground pepper
1/4 cup fresh parsley, finely chopped
1 celery stalk, chopped
5 mini bella mushrooms, chopped
1 (2.25 oz) can sliced black olives
1 box of Fusilli Col Buco pasta
1/4 teaspoon ground nutmeg
1/4 cup chopped fresh basil leaves
1/4 cup heavy cream
1 tablespoon sugar (if needed - see below, step 8))
1/2 tablespoon lemon juice (if needed - see below, step 8)
1/2 cup grated parmesan cheese, plus extra for serving
Directions:



1) Heat 2 tablespoons of olive oil in a large pot over medium heat and add the ground beef and sausage.
2) Cook for about 5-7 minutes until brown.





3) Stir in the garlic, oregano, red pepper flakes, freshly chopped parsley and chopped celery. Cook for 1 minute.




4) Add the tomatoes, tomato paste, 1 tablespoon of salt and 1 1/2 teaspoons pepper, stir until combined.  Bring to a boil.




5) Add the mushrooms, stir and simmer for 10 minutes.






6) In a separate pot, bring water to a boil, add a tablespoon of salt, bit of oil and add the pasta. Cook according to the package, about 8-10 minutes. Once done, drain and set in a serving dish.




7) To finish the meat sauce, add the nutmeg, basil, cream and the remaining 1/4 cup wine to the sauce and simmer for 8-10 minutes, stirring occasionally.

8) When sauce thickens, add 1/2 cup of parmesan cheese and stir together. **IMPORTANT** If the sauce tastes too salty, which in my case it did, I added the sugar and lemon juice to try and reduce the saltiness. Stirred together and let simmer for about 2 minutes before adding the cheese***





9) Add the meat sauce to the pasta and toss well. Serve with shredded parmesan on top. Enjoy!
